4 Ingredient Strawberry Cream Pie

August 1, 2018 By: emilyschardt@hotmail.comcomment

July is the time when Strawberries are fresh and on sale in the stores.  I made this pie the first time when Aldi’s had strawberries on sale for 99 cents.  Needless to say,I left the store with more than one carton.  And you can get all these ingredients at Aldi if you want.

Total cost for one pie was $5.

This amazing recipe is an adaption to a dish my neighbor made for us last year.  Her’s was a slow cooker version, but I found it was easier for me to finish this dish in a sauce pan.  Its a quick meal and one of my littlest’s favorites.  You can make this entire dish will these Aldi staples.

Another time saver!

Asian Sauteed Greens and Simple Stir Fry Sauce

Last Spring we enjoyed visiting my brother and sister-in-law home in the country. While the kids played with their cousin, we enjoyed taking in their beautiful gardens. The mustard greens were already growing abundantly and we gladly took a huge bunch home with us. Since the greens were fairly young we could easily use them in a raw salad. However, this is a simple dish I made where you can also more tangy mustard or collard greens because the sweet stir fry sauce balances out the stronger flavors. [Read more…]

There seems to be an increased trend of adults reading Young Adult books in the last decade.  Why is this? I think that question has more than one answer. For starters anyone who read a J.K. Rowling books  or the “Twilight” series will tell you that you get spellbound by the fantasy.  And then there are the story lines that bring you right back to your own youth.  Sometimes its simply the pure innocence and raw emotions found in the teenage characters and story-line.

I had Eleanor and Park  by Rainbow Rowell on my reading list for almost a year.  Yes, almost 12 months! It kept falling down the list as knew books came out that sounded [Read more…]

“Strengths Finder 2.0” Book Club Discussion Questions

Being a corporate warrior princess (a.k.a. employee) requires me to take continued education. Recently at a women in leadership training course we read and discussed a book that I quickly realized would be a valuable read for everyone. Yes, everyone.

From full-time student to full-time employee one of the main areas of growth for me was overcoming my weakness. For example, I have had assertiveness as one of my areas of top focus throughout my career.  I have often heard that I’m “just too nice” or that I “need to be more aggressive in negotiations”. These are constructive criticisms that I really do appreciate and makes me better understand some of my areas of opportunity. However…  What if you were told that you had to focus MORE attention to what your strengths and build upon those instead?

Raspberry Shortbread Cookies

What started as a simple shortbread cookie recipe turned into something much more one day.  I am a fan of the chocolate and raspberry combo and when planning my 6 dozen cookies for a neighborhood holiday cookie exchange I decided to make my simple (yet delicious) shortbread cookies into something a little more unique.

They are made with no eggs, so you can easily make these with your littlest of little ones without [Read more…]

Family Message Center

Our 2nd home is quite different from our Jefferson St. house.  We basically could move in all our belongings and enjoy it,  unlike the Jefferson house that took a few years (and a few $) to make it what we wanted.  However, one area we noticed was missing from our new home was a location to keep our calendar, notes, invitations, and school papers.  We picked the wall in between the kitchen and powder room because its a nice central spot for my family.

I first did some research on Pinterest to [Read more…]

Tuna Hummus Salad Sandwich

This Tuna Hummus Salad Sandwich recipe is inspired from a friend of mine who let me try a packed lunch she had for her and her son during a play date at an indoor sports complex.  Not one for mayonnaise, she came up with a delicious chickpea and carrot-spiked version that her son enjoys.  Being the Aldi girl that I am, I decided to try to come up with something as fabulous with some ingredients I happended to have from that store and it came out better than one can expect!  If you don’t have [Read more…]

Cutting down my spending because a requirement recently. As such, I really started trying new and old ways to cut down on how much I spend every month.
