Every week I have at least one conversation with a friend or new person I meet about what we are cooking or feeding our family. More than not, we talk about the successes and failures in getting our sweet little (or big) ones to eat something other than a hamburger or a bowl of cereal. Here are the top 5 unique meat-free meals my kids will eat everytime.
- Roasted Butternut Squash Soup and Black Bean Quesadillas – flavorful soup and corn tortillas filled with black beans and cheese toasted in a pan.
- Quinoa with Cranberry and Almond Bowls– Cooked Quinoa with a large handful of dried cranberries and roasted unsalted almonds, toss with a light oil based salad dressing and a sprinkle of feta. I pair this with steamed broccoli.
- Naan and Goat Cheese Pizzas with Roman Lettuce Salad – We use pre-made Naan like its going out of style, this is a great option when you are short on time and need a meat-free option. Just bake in the oven at 400 degrees for 5 minutes.
- Mini “Baked”Potatoes – If time allows I will bake the red potatoes that have been pricked with a fork, but usually I end up microwaving them to softness. Then kids can load the sliced open potatoes with shredded cheeses, steamed broccoli or peas, light sour cream, beans, and even ketchup. I let the kids go wild with the toppings.
- Egg Salad Sandwiches – mix up diced hard boiled eggs, mayonnaise, and mustard (maybe a little lemon pepper) on toasted wheat bread. Simple!
I love having a guaranteed winning meal in my pocket, but I use them wisely. No one wants to hear, “Butternut squash soup? AGAIN!?”
