There are four of us. My husband and I might be much larger than the other two Nagels, but when it comes to eating, they have us beat. These two boys can eat twice as much as me in one sitting. When I pick them up after work they are ready for dinner before I even have a chance to decide what dinner is going to be.
That’s when I started incorporating the nacho dinner into our life. Its the equivalent to the taco dinner, but speedier. There is no recipe needed, which make it great for your older kids to whip up too.
The key ingredients are taco meat, beans, cheese and of course, tortilla chips. Today we had all three, and some homemade guacamole to dollop before serving. I have been known to throw on other veggies, salsa, cilantro depending what happens to be in the refrigerator.
Here is how you pull it together. Layer a dinner plate or medium platter with any type of tortilla chips. Scoop on the toppings you want heated up, such as taco meat (I store four serving portions in the freezer for days like these. Then sprinkle on the cheese.
Grab your delicious, yet not necessarily steaming hot plate of nachos and put them in your microwave until the cheese is melty, about 2-3 minutes with my microwave.
Grab your oven mit before you remove it from the microwave, and place it in the middle of the table. Last step, check out the smiling faces around your table when they see what’s for dinner. Your loved ones will keep on asking for this weekday nacho dinner, so be ready to add it to your go to list.
