What started as a simple shortbread cookie recipe turned into something much more one day. I am a fan of the chocolate and raspberry combo and when planning my 6 dozen cookies for a neighborhood holiday cookie exchange I decided to make my simple (yet delicious) shortbread cookies into something a little more unique.
They are made with no eggs, so you can easily make these with your littlest of little ones without worrying they will be putting any raw eggs in their mouth. And not to mention its handy to have a “no-egg” cookie recipe in your repertoire.
In the end they were my favorite cookie of the holiday season and so simple to make.
